Our Tuber Magnatum also known as “bianco d’Alba” or “Abla truffle” grows around the Savigno territory, Italy.
It has a very distinctive look, outside its a smooth yellow-ochre or yellow-olive in colour, sometimes with rust-brown areas. The inside is greyish-white with ochre or hazel coloured very thin veins when ripe.
Season
Foraged from September to December, however it can ripen as early as July and August.
Characteristics
A strong penetrating but pleasant aroma with a hint of a garlic scent. Can be eaten fresh, and finely sliced as a garnish to any dish.
